Golden brown on the outside.
Crisp and crunchy. Excellent covered with cheese, sour cream and bacon.
Whoever invented tater tots has my undying gratitude.
They are one of my favorite things to cook in our air fryer.
It's been awhile since I cooked them though, with all of the excitement in the last month.
Getting Ryder off to college, preparing for the start of Jacob's sophomore year, and navigating my current job transition.
So you can imagine my surprise when I opened the air fryer a couple days ago and found tater tots in it.
I had to laugh. And then shake my head.
I honestly could not remember the last time I had made them. It had to have been more than two or three weeks ago.
Those tater tots had been sitting in that air fryer, just hanging out there. Hidden from view.
I'd walked past it a hundred times.
I tossed them out and went on with whatever I was cooking in the air fryer that day.
There are so many things to remember, it's impossible to go through life without forgetting a few of them
And I guess forgetting the leftover tots in the air fryer isn't really that big of a deal.
Neither is losing my sunglasses on the top of my head or my car keys in the freezer. Or any of the other silly little things we lose track of sometimes.
It's more important that we remember the big things in life.
Like these:
The conversations we have with family while we're enjoying those tater tots at dinner
The experiences we share with friends that we only see a few times a year
The memories we create that help us through the tough times
The goals we set in life and the pride we feel when we achieve them
The smiles on the faces of the people we love
You know...the really important stuff.
Although it did make me just a little sad when I had to throw those tater tots away.
I briefly felt regret that I wouldn't be eating them covered in sour cream and cheese and bacon.
And I made a mental note to try not to forget to put the leftovers away the next time we have tater tots with dinner.
There's a 50/50 chance that I'll remember.
Which I think is pretty good odds considering all of the life swirling around us these days.
